Pastelón de Papa: Receta, Ingredientes y Paso a Paso
El pastelón de papa es un plato clásico en la cocina paraguaya y en varios países de América Latina. Aunque su receta tiene raíces europeas, cada país latinoamericano le da su toque especial utilizando las papas que crecen en su propia región.

Receta de Pastelón de Papa
Ingredientes:
Para el puré:
- 1 kilo de papas
- ½ vaso de leche tibia
- 50 gramos de mantequilla
- Sal y pimienta al gusto
- 1 diente de ajo
- Agua
Para el relleno:
- ¼ kilo de carne molida
- 1 cebolla
- 1 pimiento verde
- 3 tomates
- 1 pimiento rojo
- 1 chorrito de vino blanco
- Aceite a gusto
- Comino al gusto
- Sal y pimienta al gusto
Para gratinar:
- 1 huevo batido
- ¼ kilo de queso rallado
Preparación:
Para el puré:
- Comienza lavando las papas, pelándolas y cortándolas en trozos medianos.
- Luego, pon a hervir agua y sumerge las papas, el ajo y un toque de sal. Cocínalas durante unos 20 minutos hasta que estén blandas.
- Después, escurre y machaca las papas hasta obtener un puré.
- Añade la mantequilla y un chorrito de leche, mezclando hasta que la textura sea uniforme y no muy líquida. Reserva.
Para el relleno:
- Pica el ajo, la cebolla y los pimientos en trocitos pequeños.
- Luego, calienta una sartén y añade un poco de aceite. Cuando esté bien caliente, agrega la cebolla y el ajo, cocinándolos hasta que la cebolla se vuelva transparente.
- Añade los pimientos y un poco de sal, removiendo y cocinando durante 3 minutos.
- Después, incorpora el vino blanco y déjalo cocinar durante 2 minutos para que se evapore el alcohol.
- Agrega la carne, el comino y el tomate previamente triturado. Mezcla y cocina durante aproximadamente 15 minutos, removiendo ocasionalmente para evitar que se pegue.
- Una vez que la carne esté lista, retira del fuego y deja enfriar.
Armado:
- Unta una bandeja para horno con un poco de mantequilla.
- Coloca la mitad del puré en la bandeja, aplánalo y distribúyelo de manera uniforme para formar una capa.
- Vierte encima el relleno de carne, distribuyéndolo de manera uniforme.
- Agrega la otra mitad del puré de papas y aplánala.
- Pinta la superficie con huevo batido y esparce queso rallado y un poco de orégano.
- Lleva al horno precalentado durante unos 20 minutos, hasta que el queso se gratine.
- Sácalo del horno y deja enfriar por unos minutos antes de servir. Puedes acompañarlo con una ensalada fresca.
Consejos y trucos para hacer pastelón de papas:
- Puedes reemplazar la carne de res por carne de cerdo picada si lo prefieres.
- Si te gusta, puedes añadir aceitunas negras y huevo cocido picado al relleno, pero esto depende de tu gusto personal.
