Receta de Sopa de Porotos (Kumanda)
La sopa de porotos o tambien conocida como Kumanda Rykue, es una comida muy tipica en nuestra cultura guarani. Este plato se trata de una sopa espesa preparada con una mezcla de porotos, carne y verduras.

¿Como hacer Sopa de Poroto?
Para hacer la sopa de porotos o caldo de porotos, solo necesitas ingredientes de buena calidad y seguir todos los pasos que te vamos a dejar mas abajo.

Paso a paso para hacer la Receta de Sopa de Poroto
Segui estos pasos para hacer el caldo de poroto:
Ingredientes
- 1/2 kilo de porotos (poroto peky)
- 1/2 kilo de zapallo
- 1/4 de queso paraguay
- 150 gramos de fideo (spagetti o cabello de angel)
- 1 litro de caldo de verduras
- 3 dientes de ajo
- 2 zanahorias
- 1 cebolla
- 1 locote
- 1/2 taza de perejil picado
- 1 hora de laurel
- 1 cucharadita de oregano
- Sal, comino y pimienta al gusto
Preparacion
- El primer que debes hacer, es lavar muy bien los porotos. Una vez limpios, los colocas en una olla con el caldo de verduras y lo cocinas al fuego lento por 1 hora y media.
- Mientras se va cocinando el poroto, empieza a cortar todas tu verduras en cuadritos (cebolla, locote, zanahoria, zapallo y ajo). Despues en una sarten con aceite, empeza a sofreirlas hasta que la cebolla se dore un poco.
- Agrega las verduras salteadas a la olla con porotos. Agrega la sal, comino y pimienta al gusto junto con la hoja de laurel. Remove un poco y deja cocinar hasta que los porotos se hablanden y esten tiernos.
- Muy bien, cuando ya esten blandos los porotos, le agregas a la olla el queso paraguay y los fideos. Desde ese momento tener que remover constantemente la olla para que el fideo no se pegue.
- Cuando los fideos esten blandos, podes apagar el fuego y agregar el perejil picado. Despues ya podes servir y disfrutar de tu rica sopa de porotos.
